Eggs on Toast


I LOVE brunch and I LOVE eggs! I would totally become vegan if it wasn’t for my love for eggs. They’re great for you, you can do tons of things with them and brunch/breakfast just isn’t the same without them. Organic eggs are the best ones to buy since they’re cage free and come from happier hens (read more about the lowdown on eggs here). Since I’m all about sharing love, here are two things I love to do for brunch.

Boiled Eggs on Toast

Boiled egg on toast, "Clare-Style"!

Prep time: 10 minutes
Cooking time: 5 minutes
Serves: 2

2 organic eggs
1 ripe organic avocado
4 slices of your favourite bread
1 ripe organic tomato, sliced
2 garlic cloves
a few slices of red or white onion
salt and pepper to taste

Bring a small saucepan of water to boil and gently place the eggs in the boiling water and boil for 5 to 6 minutes depending on how hard you like your yolk.

While the eggs are cooking, mash up half of the avocado in a bowl and set aside. Toast the bread to your preference. Once toasted, take the garlic cloves and rub over the toast – this will give them a garlic flavour. Spread the mashed up avocado over the toast and top with the onions and tomato.

When the eggs are ready, peel and slice in half. It’s a good tip to take a little off of the rounded side so it won’t be sliding all over the toast when you’re eating. Place the eggs on top of the tomatoes and sprinkle a little salt and pepper. Slice the remaining avocado and use as to decorate the plate. Voila. Brunch is served.

 

 

Spinach Scrambled Eggs on Toast

Great for getting some greens in early in the day!

Prep time: 5 minutes

Scrambled eggs on toast "Clare-Style"!
Cooking time: 7-10 minutes
Serves: 2

4 organic eggs
1/2 cup of almond milk
1 1/2 cups of spinach, washed
2 cloves of garlic, chopped
2 more cloves of garlic, whole
1 tbsp of extra virgin olive oil
4 slices of your favourite bread
cajun salt and pepper to taste

In a bowl, whisk the eggs and the milk together. In a pan, heat the oil on a medium heat and add the garlic, stirring for a minute. Add the spinach and stir until it has just wilted. Pour the egg mixture over the spinach and stir occasionally to break up the eggs.

Meanwhile toast the bread to your preference. Once toasted, rub the whole cloves of garlic over the toast, drizzle with a little olive oil (instead of butter) and serve the scrambled eggs on top. Sprinkle the salt and pepper over the top to taste. Voila! Easy peezy!
